For the Nordic Coffee Fest we asked some of our partners in crime coffee to send their favourite brewing recipes. For those who came to the fair the free printed brochure was available but worry not for those not in the NCF hood, we'll share all the recipes once a week here and on our Instagram @espressogear
This recipe comes from Lapland, north of Sweden and home to Budhas Kafferosteri. Budha himself wrote this recipe for us, which makes everything extra special. To know more about Budha's coffee rostery visit www.budhaskafferosteri.se. That's Budha Sutedja focused on his pour over.

Chemex brewer (6-cup recommended)
Chemex paper filter
20g medium-coarse ground coffee
320g water at 94°C
Gooseneck kettle (for control)

Place your Chemex filter with the triple-fold side facing the spout. Rinse the filter with hot water to remove paper taste and preheat the glass. Discard the rinse water.
Add 20g of coffee to the rinsed filter. Gently shake to level the bed for even extraction.
Pour slowly and evenly in stages:
Bloom – Pour 55g of water over the coffee. Let it bloom for 55 seconds. This releases gases and preps the grounds for extraction.
At 0:55–1:25 min, pour 45g more water slowly.
Between 1:25–2:00 min, pour 100g of water.
Finally, pour the remaining 65g of water to reach 320g total.
Let the water pass through the coffee bed and finish dripping. Your total brew time should be between 2:55 and 3:25 minutes.

Too slow? Try a coarser grind.
