For the Nordic Coffee Fest we asked some of our partners in crime coffee to send their favourite brewing recipes. For those who came to the fair the free printed brochure was available but worry not for those not in the NCF hood, we'll share all the recipes once a week here and on our Instagram@espressogear 

The first recipe comes directly from Falkenberg and was written by Beatriz from micro coffee roastery Swerl. To know more about Swerl checkout their website www.swerl.se

Ready to level up your pour-over game? Here’s how to brew a bright, balanced cup using the Origami Dripper.


What You’ll Need

  • Origami Dripper

  • Filter (Origami wave or conical filter)

  • 15g of medium-coarse ground coffee

  • 250g of water heated to 94°C

  • Pouring kettle

  • Timer

  • Your favorite mug or server


☕ Step-by-Step Brew Guide

⚖️ Step 1: Measure & Grind

Use 15g of coffee ground to a medium-coarse consistency. Not quite as coarse as for a French press—somewhere between table salt and sea salt. Because the Origami has excellent flow, avoid grinding too coarse or the water will pass through too quickly.


💧 Step 2: Heat & Rinse

Heat your water to 94°C, and rinse your filter with hot water to eliminate any papery taste and preheat the dripper. Discard the rinse water.


🌀 Step 3: First Pour – 60g

Start your timer and pour 60g of water in a slow, circular motion, making sure all the coffee grounds are evenly saturated. Let it bloom until 00:30 seconds.


🌊 Step 4: Second Pour – 60g

At the 30-second mark, begin your second pour, bringing the total water to 120g. Aim to finish pouring by 1:00 minute.


☁️ Step 5: Final Pour – 130g

Continue with the final pour of 130g, aiming to reach your total of 250g of water. Try to complete this by the 2:00 minute mark, and let it draw down.


⏱️ Step 6: Brew Time Target

Total brew time should fall between 2:15 – 2:30 minutes. If it's finishing much faster, try a finer grind. If it's too slow, coarsen slightly.
